Rhonda’s Chocolate Chip Cookies

Rhonda Neahusan was a nurse, a wife, a mother, and a dedicated servant of the Lord. She and her husband, Troy, raised their children, Jared, Josh, and Emma, at Grace Community Church, a Charis Fellowship Church in Frederick, MD where she was known for her joyful spirit , infectious laughter, and willingness to step in and serve wherever there was a need. Shortly after arriving, she and Troy began a new children's ministry for the church and ran it as volunteers for about ten years. Later, as her children grew and entered youth group, Rhonda became a fixture as a member of the volunteer youth staff. She was dedicated to sacrificially discipling her own children, as well as a wide investing in a variety of young women in the youth group to ensure that each one knew that they were a beloved child of the Lord.
Unfortunately, Rhonda lost her brave battle with pancreatic cancer and went home to Jesus in May of 2017. She left behind many legacies. The first, was her love for Jesus and dedication to service to the Lord. She was also famous for her chocolate chip cookies, which she often used to love on those around her. At her memorial service, the recipe for these famous cookies, written in Rhonda’s handwriting, was distributed to those in attendance as a lasting memory of her and her delicious cookies.
In your communion box, you have two of Rhonda’s chocolate chip cookies. One is for you, because you are welcome at God’s Table to partake of His loving-kindness and goodness. We encourage you to use the other to invite someone else to the table.
We are sharing Rhonda’s story, and her recipe, with you with the permission of her daughter Emma. The light of Jesus in Rhonda was so clearly passed on to her daughter, and we hope that the sharing of her cookies will be one small symbol of how you can share that same light of Christ with those around you.

Rhonda’s Chocolate Chip Cookies
Ingredients:
2/3 Cup of Unsalted Butter
2/3 Cup of Crisco
1 Cup of Granulated Sugar
1 Cup of Brown Sugar
2 eggs
2 teaspoons of vanilla
3 and 1/2 cups of flour
1 teaspoon of salt
1/2 teaspoon of baking soda
1 cup of semi-sweet chocolate chip cookies
Cream together butter and Crisco with a stand or hand mixer.
Add both sugars and beat well.
Add eggs and vanilla and beat well.
Add flour, soda and salt and beat until just combined.
Stir in the chocolate chips.
Put rounded scoops on a cookie sheet or baking stone.
Bake at 375 for 12 minutes - watch them carefully as this can vary based on oven and size of cookie.
